Recognized throughout the world as the Gold Standard in tea education, the International Tea Masters Association announced a special training for individuals interested in opening or expanding a tea room to serve Afternoon Tea.  The theme for the ITMA Certified Master Tea Host Course™ is “Tea Time is a Profit Center.”  The three-day training will be held in the Presidential Suite at the luxurious Waldorf-Astoria Hotel in New York City, October 5 – 7. 2014.  Registrants will learn to plan, prepare, and present an elegant Afternoon Tea.  They will sample the most popular teas for the event, as well as learn to prepare all the customary essentials, like scones with jam and clotted cream, pastries and dessert items, dainty finger sandwiches, and other accoutrements. With potential profit margins ranging from 100% to 500%, tea is one of the fasting growing consumer beverages among restaurants and foodservice establishments. Afternoon Tea, usually served between 2 pm and 5 pm, the slowest hours of operation, can generate a price of $25 to $100 per person, producing a significant block of gross revenue on a monthly basis.  Registrants will learn how to turn even a small space into a profit center.

Spanning three decades, ITMA Certified Tea Event HostessEllen Easton will be leading the training.  She acquired a vast amount of knowledge and experience of the Afternoon Tea Service, Menu Planning and Tea Etiquette, and has provided consulting services to literally all the major hotel chains in North America, including the Waldor-Astoria, The Plaza, and Fairmont Group

Who should attend this three-day seminar? Restaurant owners and managers, hotel general managers and food & beverage department heads, chefs, special event planners, caterers, instructors, and anyone who loves tea.

What will you learn at this training?  The particulars and details involved in operating and serving Afternoon Tea on- or off-premise, including revenue projections, menu planning, styles of service, how to serve tea for 1 to 1,000, staff training protocols, proper etiquette, table settings, recipes, resources, cross marketing, special events and more.

Any food service establishment can enter the arena to launch an Afternoon Tea Service. It does not have to be a traditional English-style. Tea time is inclusive of many tastes, including French, Italian, German, Russian, Asian, Spanish and contemporary.

At the course’s end, an optional test is provided for those who wish to receive a Certificate of Completion and an ITMA Certified Tea Event Host™ lapel pin.

Tuition for the complete program is $3,795 for ITMA Members ($3,966 for Non-Members). To register, post a $250 non-refundable tuition deposit at Class Tuition. Registrants will receive an invoice by email for the balance, which is not due until September 15, 2014.
